Low-Calorie Post-Workout Recipe: Turkey Enchilada Salad

A crunchy salad can be a great post-workout meal, such as this turkey enchilada salad with creamy lime dressing.

In fact, that lime dressing might just be the kick you need to regain some energy after your time at the gym. And while this recipe may come in a little over 500 calories, the taste won't have you regretting those extra 28 calories. Ingredients

  • 3/4 cup light sour cream
  • 1/2 cup low-fat Buttermilk
  • 1 tablespoon green onion sliced, green part only, no white
  • 1 teaspoon chopped cilantro
  • 1 small lime zested, about 1 teaspoon
  • 2 teaspoons fresh lime juice
  • 1 tablespoon honey
  • 1/8 teaspoon ground cumin
  • Kosher salt and pepper
  • Olive oil spray
  • 10 oz. ground turkey
  • 1/4 teaspoon ground cumin
  • 1 clove garlic, minced
  • 1/2 cup canned green enchilada sauce
  • 1 small hearts of romaine lettuce, chopped
  • 1/4 cup black beans, drained, rinsed
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup canned corn, drained
  • 1/4 avocado, seeded, sliced into 4 pieces
  • 1/4 cup light shredded cheddar cheese, optional

Directions

Makes two salads.

To make the lime dressing, whisk the sour cream, buttermilk, green onions, cilantro, lime zest, lime juice, honey, cumin, cilantro, olive oil and a pinch of kosher salt and pepper together. Refrigerate until needed. The dressing is best if made one hour before using.

Heat a saute pan to medium heat. Spray the pan with olive oil, add the ground turkey and cook until browned. Add the garlic and cook for one minute, stirring occasionally. Add the enchilada sauce and cook for one minute. Take off the heat and set aside.

To make the salad, layer romaine lettuce, turkey, beans, tomatoes, corn and top with two slices of avocado. Sprinkle cheddar cheese on top if desired. Drizzle with desired amount of the creamy lime dressing.
